Summer's last hurrah or Life without eggs!
This past week flew by quickly! Nice to have Labor Day weekend adding an extra vacation day! We spent the middle of last week in Ocean City New Jersey. Enjoying time together with grandparents and Aunt Becky on the beach at the boardwalk and just hanging out at the house together. We tried some new things. Anastasia, our adrenaline junkie, enjoyed many rides on the boardwalk and Gwen tasted sand! Tristan always enjoys making sand castles and digging in the sand. Jason and I enjoyed sunrise and sunset at the shore. Beautiful! Peaceful! and relaxing, though always a little sleep deprived when on vacation with an infant!
We enjoyed lots of good food. Some of the places close to where we stayed, Mildred Strathmere Resturaunt, yummy sea food, Captain Bob's super cool, casual, and made with love, and a la mode, Ice cream!. Of course, being on vacation with Grandma usually includes chocolate chip pancakes and she did not disappoint, better than any restaurant!
Monday, before our trip, Gwen and I visited the allergist to get advice and confirmation about her egg allergy. Since Gwen's trip to the ER last month Gwen and myself have gone on an egg free diet. The allergist said that I could try introducing baked goods (with egg) into my own diet and see how Gwen handled that, unfortunately she has not handled it well. Poor girl! I guess we are back to egg free. Oh well. I have learned that substituting 1/4 cup of whole fat plain yogurt for each egg in the recipe works pretty well. I can still enjoy my pancakes, muffins and other baked goodies. I tried eggless zucchini mini muffins (recipe here), super yummy!
We are excited about starting our school year off this week. Setting up our classroom and tying the loose ends around our summer unit study on Space (blog post to come!).
